This is an easy one. I actually made it to teach my kids about the revolutionary war and how people ate back then.
I was a bit worried about it's simplicity, but it's ended up being delicious. Not only were there were no left-overs, there were disappointed sighs when it was discovered that the pot was scraped clean.
You know the way I do it. No novels here. A simple recipe calls for a simple introduction.
Easy Creamy Potato Soup
5 lbs potatos peeled and cubed (I used yukon gold)
1 onion, chopped
6 stalks of celery, chopped
2 T Butter or Butter Sub (I use Country Crock Plant Based Avocado oil
2 Cups water
2 Cups Oat/Coconut milk Half and Half
3 cups Rice Milk or other milk substitute (or just 5 cups of real milk if that's your thing)
Salt
Pepper
Optional add ins (Highly recommended):
-Cheese or Cheese Substitute (I used Daiya Cheddar Style Shreds)
-Chopped bacon (I love to use the precooked kind)
-OR Cubed Ham
Directions:
1- Chop up veggies
2-Heat oil in pot
3-Add onion and celery to butter and saute' until softened
4-Add Potatoes
5-Add water and Cover. Simmer until potatoes are soft.
6-Add Creamer and milk substitute
7-Mix in any add ins and Salt and pepper to taste.
