So this was an invention born out of every mom's favorite game, "I don't want to cook tonight, but what can I throw together from the pantry?"
Here's the basic recipe. You could add onions or green peppers if you want, but I didn't want. I just wanted to dump it in a pot and feed my family.
And that's how I'm going to write the post. So, without further ado...
Luau Meatballs:
1 pouch Teriyaki Pineapple Chicken meatballs (I find mine at Costco)
1 Cup Sweet Baby Ray's BBQ sauce
1/2 Can Coconut Milk
1 can Pineapple chunks--Juice reserved
1 heaping T Cornstarch
Directions:
1-Drain the pineapple juice into another container (because we're reserving it for a minute).
2-Put everything except the pineapple juice and the cornstarch into a pot.
3-Add Cornstarch to pineapple juice and stir until cornstarch is incorporated (no lumps).
4-Add pineapple juice mixture to pot.
5-Stir the pot--without the gossip.
6-heat over medium high heat until sauce has thickened.
Serve over prepared rice. Goes great with green salad!
